Traveling the world almost non –stop for almost eight years working as a high-end chef provided me with the gastronomic experience of a lifetime. This special connection with cuisine through travel has allowed me to get to know the heart and soul of a country through the mutual appreciation of the sharing of food and drink, especially in a professional sense. Words can’t describe the remarkable bond and trust which form with people from all walks of life from all over the world as a result.
I recollect tastes, aromas, sensations and the partaking of food as clearly as I remember historic sites, smiling faces or unforgettable landscapes; all leave an everlasting impression. Whether rich or poor, food is a great leveller, bringing out the best in human nature: kindness, integrity, humility and generosity. My passion and curiosity about previously undiscovered flavours, and the knowledge that there are still endless culinary-infused experiences somewhere out there, waiting for me all over the globe, are a powerful motivation to keep on travelling.
No matter where I was in the world whether it is Europe, Asia or The Caribbean provisioning was my paramount joy inducing me in a creative flow of endless possibilities from market to table cuisine. Here are my favourite dishes I relished the most from each country during this time travelling. I mastered cooking each dish myself. I will soon provide recipes for each dish.
